Oatmeal Protein Pancakes

Oatmeal Protein Pancakes



For the pancakes:

1 cup Steel cut oats

1 cup rolled oats

1 serving of vanilla vegan protein powder

1 table spoon maple syrup

1 tea spoon Vanilla extract

1 cup Almond milk

For the cashew butter:

1 cup of roasted cashews

1/3 cup almond milk

1 table spoon maple syrup

Dash of salt

For the mango sauce:

1 mango

1/4 cup coconut milk

1/2 teaspoon maple syrup


1. Mix both oats and protein powder together in a food processor. Then add your vanilla extract, almond milk and maple syrup. Process again. Bring your skillet to med heat and pour in enough mix to create a decent sized pancake. Cook for 2 minutes on each side. Repeat.

2. Rinse food processor then add your cashews, almond milk and maple syrup. Mix until you have a nice creamy consistency. Pour into separate bowl and top each of your pancakes with a nice spread of your cashew butter.

3. Rinse your food processor again then add your de-skinned mango, coconut milk and maple syrup, mix then finish your stack of pancakes with this delicious sauce.

4. Finish with your favorite favorite fruits on top and enjoy!!!
