K, ya’ll. Here’s another 98% raw recipe!!!!! 😂 Brought to you by yours truly. This was super easy to make because why?? It’s mostly RAW!! Meaning, all you have to do is chop, chop, process, process, and devour! I hope you enjoy this raw Taco Tuesday!!!!
For the rice:

1. Cook your rice while you chop the veggies that will be mixed in once rice is cooked: dice tomato, onion, red peppers and jalapeño. Mash 1 avocado and slice another and add the mashed avocado to your cooked pot of rice along with half of all your diced veggies Top it off with a squeezed lime, salt & pep. Set aside and also set your other half of veggies aside for the tacos.
2. Throw another tomato in a food processor, add some onion, cilantro and jalapeño and mix until you have a. I’ve consistency. Add some lime, salt & pep and set aside.
3. Mash your black beans and add some coconut milk to get a creamy consistency, then had some liquid aminos, taco seasoning (or any Mexican flavored seasoning) and whip again.
4. Using your romain leaves, build your taco starting with a layer of mashed beans, sprinkle your red and green peppers, then onions, cilantro, slices of avocado and as much cheese to top as your little raw vegan heart desires
